Coconut Chia Pudding

Chia seeds are full of antioxidants, fibre, protein, and Omega 3 fatty acids. They are great fuel for when you are working out and they keep you feeling full, which helps you lose weight.

Chia seeds are easy to incorporate into your diet: add them to a smoothie, on top of a salad, or use their natural “jelly” texture to make a pudding!


 

What you need (single serving):

1 tablespoons chia seeds

2 tablespoons hot steeped green tea

4 oz sweetened coconut milk

  1. Mix chia seeds and hot green tea in your serving dish. Let sit for a few minutes until the chia seeds begin to bloom. After they soak, they have the texture of tapioca.
  2. Stir in coconut milk, let sit for a few minutes, and enjoy.

*This recipe can also be made the night before and left to set in the refrigerator over night. The texture will continue to thicken as the chia seeds soak.

**Add extra coconut water or green tea to this base for a super-hydrating post workout drink.
