Eat Your Greens: Salad Wraps

An easy way to eat your greens is by making Vietnamese-style salad wraps. They are super fresh and fun to make with your friends. Make them the night before for a fresh lunch on the go.

What you need:

Large Vietnamese rice wrappers

Hot water and a large pie plate for soaking rice wrappers

Any vegetables you have (try carrots, bell peppers, cucumber, and green onion all julienned)

Fresh mint and basil leaves

Kelp noodles or rice noodles

(Optional) Thinly sliced grilled chicken, beef or tofu

Dipping Sauces:

Try hoisin sauce, thai sweet chilli sauce, homemade ponzu sauce (organic tamari with a squeeze of lemon)

  1. Soak rice wrapper in hot water for 1 to 2 minutes until softened
  2. Fill your wrapper with your favourite fillings. Fold like a burrito.
  3. Enjoy with one or all sauces!

*Tip: these salad wraps can be made ahead. Keep them in an airtight container or wrapped in plastic wrap to enjoy the next day.
