CleanRecipe: Spicy Kale & Buckwheat Stir Fry

We have teamed up with DeannaDickins.com to bring you another simple, delicious and healthy recipe.

This time, it is a superfood-packed interpretation of take out stir fried noodles – Spicy Kale & Buckwheat Stir Fry. We have loaded this up with chilli, ginger, shallots and garlic to pack in lots of flavour without calories, and are using vitamin-dense kale as our main veg.

You can use any vegetables you like, but if you are short on preparation time, one hearty green like kale is a great option.

We are using buckwheat instead of noodles, but you can use rice or any other starch you prefer. Buckwheat is a healthy grain that is gluten free and full of nutrients and fibre. It will keep you full and satisfied!

No salt or pepper is needed for this dish – just use some soy sauce or tamari sauce and a drizzle of lemon juice (learn more about the benefits of kale, including why you should combine it with leafy greens here)
